Gud Bhajiya (also spelled Gur Bhajiya) is a traditional sweet snack from the Indian state of Chhattisgarh. It is prepared using jaggery (gud) mixed with gram flour batter and deep-fried until golden brown. The dish is commonly made during local festivals and family gatherings and is especially popular in rural households.

Gud Bhajiya reflects the widespread use of jaggery in central Indian cuisine, where it is traditionally used as a natural sweetener in festive preparations.

Preparation

Gud Bhajiya is prepared by dissolving jaggery in water to form a sweet syrup. Gram flour is then mixed into the syrup to create a thick batter. Small portions of the batter are dropped into hot oil and deep-fried until crisp on the outside and soft inside. The snack is typically served warm.

Cultural significance

The dish is often prepared during harvest festivals and traditional celebrations in Chhattisgarh. Because jaggery is locally produced in many rural areas, Gud Bhajiya is considered an accessible and affordable festive sweet. It is sometimes served alongside other regional snacks such as Thethri and Khurmi during community gatherings.
